What veggies can be fermented successfully?

For instance, if I ferment sliced cucumbers with salt and a little kefir whey, would the result be edible and anything like pickles?
What other veggies can be fermented?
I know about cabbage, carrots, and beets.

Are you asking which veggies can be fermented successfully? With or without kefir? Without kefir most veggies can be fermented. Which veggies are you wanting to ferment?

1. Choose vegetables to ferment.
2. Decide how much salt to add
3. Choose containers to use.
4. Devise a weight and cover system.

You can ferment such as:

Carrot
Green Beans
Radishes
Beets

and many others
