I was wondering how much water kefir is too much per day? I can't seem to get enough, lol but I don't want to overdo it.

You can drink as much as you like as long as your body can handle it!
However make sure you're still getting enough water.

I drink about 2 cups a day and it feels about right for me. Like Gabrielle said, trust your body to know how much it can handle.

Thanks guys! What about the sugar if I'm drinking a couple cups a day? I don't like to drink too much sugar...

I drink about a 1 or 2 cups a day, but not every day. I like to alternate with my milk kefir. I'm not sure about the sugar. I prefer letting it sit in the fridge for a several days and then its nice and sour with less sugar.

My concern is the sugar content. I'd love to know the glycemic index of a completely finished water kefir! I suspect it is too high for a diabetic, as is my wife.

I, too, am concerned about sugar content. I am diabetic...and I need to know sugar content so my doctor can guide how much insulin I need with two cups of water kefir. I am using a quarter cup of 80/20 sugar/molasses to 1 quart well water. If I add nothing else for a second fermentation...can I count on the sugar content to be less than what I put in it? Does anyone know how much less it might be? And...will it get fizzier if I let it sit longer without adding additional carbohydrates? I will carefully take my blood sugar levels before and a half hour and an hour after the water kefir intake. This, too, can help guide my doctor. I love carbonated drinks. I am so very happy to have discovered water kefir! So much healthier than Coke!

That's a good question. There is certainly less sugar after its done as it is converted into alcohol and acids. I've tried to figure it out and it sounds like maybe atleast half the sugar is used up in a typical ferment. Some sources say around 80% is used up though. Try longer ferments or store it after its done. It will slowly lower the amount of sugar.
