I, too, am concerned about sugar content. I am diabetic...and I need to know sugar content so my doctor can guide how much insulin I need with two cups of water kefir. I am using a quarter cup of 80/20 sugar/molasses to 1 quart well water. If I add nothing else for a second fermentation...can I count on the sugar content to be less than what I put in it? Does anyone know how much less it might be? And...will it get fizzier if I let it sit longer without adding additional carbohydrates? I will carefully take my blood sugar levels before and a half hour and an hour after the water kefir intake. This, too, can help guide my doctor. I love carbonated drinks. I am so very happy to have discovered water kefir! So much healthier than Coke!
