Another first timer

We started our first batch of kefir yesterday using live grains and have a few questions:

1. The instructions say to wait 24-48 hours. It has been about 34 hours. I can see the batch starting to separate but wonder how to know if the batch is really done?

2. When we strain the liquid from the grains I understand the grains should go in a clean jar with another cup of milk. Do we store the strained liquid in the fridge?

3. If we drink a few ounces of the liquid on an empty stomach is there anything that neutralizes the benefits, such as drinking coffee too soon after?

4. Any other advice or tips?

1. It varies by preference mostly. Some people like it stop the ferment before any separation, while others like to wait until there's plenty of separation. I like to stop it when the whey separation has just started.

2. Correct. The strained liquid is the finished kefir and yes, just put it in the fridge. You can drink it right away or wait a few days until it ripens a bit and develops more flavor.

3. Good question, but I'm not sure there's much that can neutralize the strength of homemade kefir.
