I'm going to try using goats milk from the farmer's market this year. I can get it unpasteurized so this should make the best kefir and true to it's history.

Since Listeria poisoning in the news again............

I was wondering if Kefir milk inhibit Listeria?

A quick internet research reveals more info than not that Keir can inhibit Listeria?

Does anyone have the time to research and collect any studies that are pro or con?

Ok someone give me some ideas on what i can mix into Kefir cheese? It's so easy to make using cheese cloth.
