ultra pasteurized milk

Hello,
I am starting my Kefir for the first time and I am using ultra pasteurized milk. I can only find this type of organic milk at this time. We are looking in to raw milk but the budget isn't allowing it at this time. Back to the point….. How is my kefir going to turn out? Is it eventually going to kill my grains or will it just take longer or not have as many nutritional benefits?

Thanks, Alyssa

It's not as nutritional because it doesn't have enzymes and bacteria, but I've heard that many people can successfully kefir with ultra-pasteurized milk. It would probably take a while to have any significant impact on the grains. You can also try the non-organic pasteurized milk that's common. It may be healthier because its processed less, but then its non-organic, so it can be a tricky decision.
