Grains tend to do better in hard water or non-filtered water, but it really comes down to the water you are most comfortable drinking. The minerals and whatever else you are trying filter will still be there in the finished water kefir. If your softener doesn't filter too much out, it should be fine...

Yes you can. It's not ideal for the viili bacteria though, so I would recommend having another stater in pasteurized cows milk and then using that starter to make coconut milk viili. You could probably do a couple or so batches in coconut milk before having to start over with the starter from the co...

Possibly. If you are concerned, I would recommend separate areas. Sourdough has some strong airborne yeasts and that can get into the kefir and viili if you are using open lids. Typically most people have issues with milk kefir being too yeasty and fizzy and they want that creamy bacteria rich kefir. Hmm, ginger beer is pretty tough stuff and should hold up to typical sanitizers. The jar and equipment don't even need to be sanitized to be honest. Just a normal clean.
