Are they still multiplying? I would be more concerned if the growth has slowed down or stopped. Many times grains do shrink with different environments. It tends to get smaller with yeastier environments such as more warmth or more minerals. But they should stabilize at some point. If they have stop...

Once milk kefir gets really active, 1 tablespoon can ferment about 4 cups of milk. So you may need to use less grains or more milk. Yes, the starter is the same as the finished viili yogurt, just make sure to leave some so you can make another batch. You can use it, but it may not be effective if it hasn't formed a thicker layer. 7 days can make great kombucha, but many times the scoby won't be done. If your goal is for scoby growth, you may need to let is sit another week or two.

If the temperature is only 60 degrees, its probably too much milk. Cut back to 1/2 cup and let it brew that amount for 24 hours. It should be able to handle that amount of milk within 1-2 batches. And then just slowly add more milk every batch if its doing well.

Kombucha, unlike kefir needs plenty of oxygen to do well. I wold not recommend air locks with kombucha. A properly secured cloth lid, paper towl or handkerchief should be enough to keep the fruit flies out.

I think its okay to use airlocks with ginger beer just like it is with water kefir. Some bacteria strains are aerobic and some are anaerobic. Some get minimized and some get strengthened with each respective method. Either way works I believe.

Either way. Sometimes starting out, especially if you are sensitive to fermented foods, it may be easier to consume with a meal. Some people think that if you consume on an empty stomach it has a better chance of populating the intestines. I would recommend just doing whatever feels right to you tho...

That molasses can be quite strong. You can usually get by with just a little bit of molasses or try a good dark sugar such as rapadura.
