It's best stored with a closed lid so it doesn't dry up in the fridge and so it doesn't cross with anything else in there. It usually does not build up enough pressure in the fridge to cause any concern about it breaking the jar, especially for a week or two.

Hmm, that's certainly possible in my opinion. The drying process does damage the grains somewhat significantly. It definitely sounds like yeast overgrowth. It can take some time to naturally correct. Maybe even a couple weeks. If not, the next thing you can try is to give them a rinse and rest in the fridge for a few days to help reset everything.

Anytime you rinse the grains, it will significantly slow it down by itself. A batch in coconut milk will probably slow it down a bit as well. So it's probably just fine and they should come back up to speed after a few batches.

Scobys can either sink, rise or be somewhere in the middle. It doesn't really indicate anything besides yeast content. If it rises, it probably has more yeast. Ian,

The ginger bug is derived directly from just the ginger, so the strains (especially the bacteria strains) are very limited. The Ginger beer plant has many more bacteria strains and will generally have more of a sour multidimensional taste vs just yeasty with the ginger bug.

I think worse than cold temperatures is fluctuating temperatures. The grains can adapt to a cold temperature, but they have trouble with temperatures that swing from cold to hot or the other way around. Typically the yeast gets out of control. It's probably okay, but also probably quite fermented / sour with the grains sitting in it for that long. If it still smells and tastes pleasant, I would say you could definitely drink it. You can also mix in some sugar if you need to.
