From what I understand, culturelle is just one strain of bacteria, whereas kefir has many strains of bacteria as well as yeast. That's really unusual. I don't know what could cause grains to just disappear like that, especially in 2 days. They may just be hidden? did you try straining the milk and see if they are just being shy?

I don't know of any specific evidence, all I have is anecdotal evidence. When I try low fat, especially non-fat milk, the grains seem to shrivel up more and not do as well. When going back to more fat, they seem to pick up and just seem more rejuvenated. I'm not sure the reason behind it, but to me ...

Looks like yeast to me and maybe some grain debris. It may be due to alternating between the white and brown. It might be unsettling the ferment and the yeast. It doesn't look that bad though, I've seen ferments like that before. I would say its okay to drink if it tastes good.

Yes, growth is a good sign that the grains are happy. If its keeps going, I would give the grains a really good rinse for like 30 seconds and see if that helps.
