If you wait an extra day or two after the initial 48hour ferment to allow more of the sugar content to be lessened will that harm the grains having been without "food/sugar" for several extra days?

I have been storing kefir grains in there fermented liquid for a couple weeks and would like to start making more. Can I use/drink the stored water kefir or should I discard it and start over? If its ok to still consume/use can I use it for a second ferment?
