A batch of soy beans were processed into tempeh. Half a liter of dried soy beans were processed. The dried beans were washed, boiled for 30 minutes, run under cold water and the skins were hand rubbed about five times and the loosened skins were floated off. When the skins are removed the beans split into halves.
The beans now in volume one liter were then placed in a colander and placed in a pressure cooker for steam cooking for 30 minutes. After cooking the beans were allowed to cool to room temperature. A tablespoon of vinegar was added and mixed thoroughly to lower the pH slightly. Then half a teaspoon of spore starter was added and mixed carefully by hand. The spore starter is from Indonesia and found to be excellent quality and low cost off the Internet.
The beans were then packed into molds lined with cotton sterilized cloth and placed in a home fermenter set at 31 C for 24 hours.

With several batches of tempeh produced and looking for improvements, one major change was adding a spoonful of sugar to stimulate the spores and to increase the incubation time to 30 (24) hours to make the texture more dense. The end produce is perfect. It can be reproduced without failures.
Summary of procedure: Five hundred ml of dried soy beans,rinse, boil on stovetop vigorously for 30 minutes, Cool with cold water, rub the beans together to split and to remove skins, flush away the skins. repeat several times, five rubbing/rinsing is about normal. Pressure steam cook the soy beans for 60 minutes one hour at 15PSI. Allow to cool to room temperature and add one tablespoon of vinegar to reduce the Ph slightly.
Two modifications were incorporated: fermenting for 30 hours from 24 hours, This makes the finished product more stiff, meaning handling is facilitated; The other is the addition of one teaspoon or white sugar, which appeared to increase the activity of the starter power.
Each loaf is from 3 to 4 servings for one person. A pleasant high protein food.

if you still don,t believe on me then chant any other name for 5 Min's and chant this holy name for 5 Min's and you will see effect. i promise you it works And chanting at least 16 rounds ( each round of 108 beads ) of the Hare Krishna maha-mantra daily.

ive stopped doing the soy, the rate at which the soy is kefiring is unusual, ive cut back the amount of grains and it just delayed the process by a couple of hours more, why does the kefir so rapidly i do not know? Ive also found that the grains will get coated with the soy curd quite heavily, unlike using cows milk, returning them to regular milk hasnt slowed them up really much that ive noticed but theres the soy build up on them. Apart from washing them by hand in water to remove this buildup, i decided to compost in the garden. Ill wait until someone else chimes in or gives me better procedures, i see on the net that people kefir soy for 24+ hours?? mine takes literally 2-5 hours for complete kefir with heavy curds and whey. Thanks for reading.
